For a more refined experience, visit our restaurant, 1530, where you can enjoy a thoughtfully curated tasting menu that celebrates the finest local Suffolk produce and delicacies to suit every palate.

Ultimately, when it comes to summer dining, Francis Mascarenhas, Restaurant Manager, believes simplicity and seasonality are hard to beat.

“If I’m sitting outside on a sunny afternoon, I’d choose our cured trout every time. It’s light, fresh and full of flavour without feeling too heavy. The combination of delicate fish and bright summer flavours is exactly what people want when they’re dining outdoors. Pair it with a chilled glass of white wine, and you’ve got the perfect Suffolk summer lunch!”

Whether it’s a relaxed lunch for two beneath blue skies, a catch-up with friends over sharing plates and a glass of wine, or a special family celebration, our welcoming yet sophisticated setting provides the perfect backdrop for every occasion.

Few experiences capture the feeling of summer quite like enjoying a beautifully crafted cocktail outdoors with friends, family or a partner. Our combination of historic surroundings, countryside views and expertly prepared drinks creates a sense of occasion that feels both luxurious and accessible. You don’t need an overnight stay to enjoy that feeling of escape;      sometimes, all it takes is a great cocktail and a beautiful setting.

For Elliot Baskett, Bar Manager, summer cocktails should be refreshing and easy to enjoy in the sunshine. “My go-to summer cocktail is a classic Spritz. It’s bright, refreshing and made for long afternoons on the terrace,” he says. “You’ve got the perfect balance of sparkling wine, citrus and botanical flavours, so it’s incredibly easy drinking while still feeling special. It’s the kind of cocktail people order once and then end up having all afternoon.”

As the sun begins to set, the terrace becomes one of the most atmospheric places to spend an evening. Conversations stretch a little longer, laughter carries across the gardens, and visitors settle comfortably into the slower rhythm of summer.

Stay for Dinner

Although many visitors initially arrive for a spa day, lunch or drinks, it’s not uncommon for plans to change. After all, when you’re already in such beautiful surroundings, why leave early?

Our restaurant offers an inviting atmosphere where guests can continue enjoying the very best of seasonal Suffolk produce. From Maldon rock oysters, a juicy Dedham vale rib-eye steak or Suffolk lamb, our dishes wholeheartedly celebrate the region we call home.
